First, I didn't use Anvil, I used NoteWorthy Composer. And Anvil is not easy. It is complicated. But now that I know some sheetmusic (see? I did learn it! :3) , I may try it again.
EDIT: Now that I know sheetmusic, I think I'll use Anvil instead. Thanks!
EDIT2: Wait, it seems that I can only use one instrument per song. Help? There's got to be a way to have guitar, drums, etc. on one song!

Just create a track, from one of the drop-down menus at the top, I'd check which one, but I'm running Linux on this machine. I haven't used Anvil in a couple of years, but if I was going to specifically write a midi, that's the tool I would use.

(Remember, midi chan 10 is the drum set!)

I personally find noteworthy more agreeable when it comes to scoring.

Anvil, by the way, has also piano roll format which doesn't use sheet music, so if you're really THAT averse to it, try piano roll format.

However, if you're not willing to put in the effort and time it requires to write good music, perhaps you shouldn't be writing it; that or you haven't felt the "spark" yet. Either way, keep practicing and exploring and it will all come together, I promise.
